A large part of the vineyard is harvested manually, to vinify each plot separately. It is in a perfectly equipped cellar (sorting table, carpets, thermoregulated vats, wooden vats, pneumatic presses, etc.) that he vinifies his grapes in a little interventionist way. The red ones cook a long time, are slightly drawn and dewatered manually. Whites undergo long pressing and ferment at controlled temperature.

A family property of 29 hectares, the estate is located west of the Loire Valley, in AOP Muscadet Côtes de Grandlieu. Rich in the combined influence of the Atlantic coast, the Loire and Lake Grandlieu, the terroirs offer us oceanic, fresh and iodized wines.All the vines have been organic since 2016.
Vinification: Harvested by hand - Slow pressing - spontaneous alcoholic fermentation - aging on total lees until bottling.
Vines: 10 YEARS /20 YEARS
The Domaine des Remizières has been a family business for several generations. At its beginning, the farm had 4 hectares of vines, part of the harvest was delivered in cooperative cellar. From 1973, vinification is done entirely on the estate. Since then, the estate has grown considerably as it currently reaches 35 hectares. At the beginning, Alphonse manages the property. Then Philippe, his son, settles in 1977 and decides to market all the production in bottles. Expansion and modernization work is then done little by little. In 2005, Emilie, with her degree in oenology in her pocket, joins her father. In 2009, Christophe, Emilie's brother, joined the estate after obtaining his BTS viticulture / oenology. It's a family job with a will and well-defined tasks.

The Domaine des Hauts Châssis is located in the heart of the place called "Les Hauts Châssis" in the south of the Crozes-Hermitage appellation, it was created in 2003 by Franck Faugier, but the cultivation of the vine dates back to 5 generations before him. on the farmland of his ancestors.
It was in 1998 that Franck returned to the estate, after a career in sales, he then took over the family estate which at the time consisted of 15 hectares of vines and 15 hectares of orchards.
The vinifications are carried out at low temperature; the extractions are made by reassembly in the concrete vat and only by manual punching in the wooden vat.
Maceration of 20 days during which the lees are resuspended daily in order to bring texture, mellowness, coating to the wine.
Pressing of the marcs by vertical press cage wood.
All the press wines are separated from the wines of gout waiting for assemblages.
Clos Manou: 80 to 90% of the wines are aged 17 months in new barrels exclusively in wood of French origin, with a medium heat.
10 to 20% of the wines are aged in ovoid vats (concrete eggs) of 7 hectoliters for 12 months in order to maintain freshness and purity. For about 10 weeks, we operate a weekly stirring by rotating the barrels in order to put the lees in suspension and bring to the wine a creamy texture which amplifies the mid-palate.
Little Manou: we operate in the same spirit and with the same philosophy as for our great wine, but to preserve the balance of the wine, a breeding of 12 months is carried out in the old barrels of Clos Manou.
Only two rackings are made during the breeding.
The bottling is done without sticking with a light filtration, always under cover of carbon dioxide to avoid any premature oxidation.

It is in 1853 that the Baron Nathaniel de Rothschild, from the English branch of the famous family of patrons and bankers, buys Château Brane Mouton in Pauillac, in the heart of the Medoc. He renamed it immediately Château Mouton Rothschild. From the union of these two magic names will be born a wine of legend.
In 1922, at the age of 20 years, Philippe de Rothschild (1902-1988), great-grandson of Baron Nathaniel, takes over the destinies of Mouton. Its decisions, starting with bottling at castlewill revolutionize Bordeaux's uses.
Over the years, he had the “Grand Chai” built, initiated the collection of artist labels, created the Musée du Vin dans l'Art, and obtained official Premier Cru Classé status for Château Mouton Rothschild. In 1988, Baroness Philippine de Rothschild succeeded her father, Baron Philippe de Rothschild. This wine bears the Bordeaux label of origin.
