Winemaker  The Chapel-Vaupeloteigne 

Delphine is Burgundian and comes from a family of winegrowers. His professional life has always been linked to the great Houses of Burgundy.
Grégory is also from Burgundy. A graduate in oenology, he learned the trade alongside Nadine Gublin, winemaker at the Jacques Prieur estate, and Jean-Pierre de Smet at the Arlot estate. In 2001, he moved to Bordeaux to vinify at Château Smith-Haut-Lafitte, a Grand Cru Classé from Graves. Then it is the meeting with the consultant Stéphane Derenoncourt that he assists until 2004. Then, he becomes technical director of Michel Chapoutier and general manager of Ferraton Père & Fils. Since 2011, he has been technical director of Domaine Laroche in Chablis and has been following Quinta Do Monte d'Oiro in Portugal as a consultant since 2006.

The appellation covers 300 hectares of which around 180 are planted with vines, located a few kilometers from Chablis

Originally from Champagne, Alexis de Benoist settled in 2010 as an artisan winemaker in the family property to reinstate the culture of the vine, interrupted for a century, and reconnect with its history. Since then, the family has regained its title of winemaker.

Today, he cultivates 9,5 hectares of vines spread over two wine regions: the Mâconnais and the Beaujolais.

The intention is to harmonize the grape variety and its terroir to obtain wines with character. Anxious to preserve the environment and the quality of his wines, Alexis de Benoist has chosen to focus his efforts on the vine, favoring traditional agriculture and farming methods linked to observation.

In this 30 to 80 year old vineyard, the harvest is done by hand. The grapes are thus harvested healthy, at maturity and remain intact on arrival at the vat room for vinification in whole bunches.

The choice of traditional vinification and aging aims to preserve the freshness of the fruit, while retaining structure, in order to produce an expressive, balanced and delicate wine for laying down.

The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

One of the main vines of the Domaine du Couvent in Chambolle Musigny is located in the Clos de l'Orme climate for 36 ares, which allows vinification by plot of 7 to 8 rooms. Bordering the 1er cru Les Charmes, the vine is established on a gently sloping soil, very draining because composed of a thick layer of limestone scree from the valley of Chambolle. The plot bears very scattered plant material since there are 6 different plantations, the oldest of which were carried out in the 40s, then in 1967,1970, 1972 and 1997. The last plantation dates from XNUMX after the acquisition of the vines by the family. This diversity is one of the keys to the complexity of Clos de l'Orme wine.

History & traditions: The name Flagey-Echezeaux finds its origin in the word “chezal” (“chezeaux” in the plural), which formerly designated a small hamlet. Formerly pronounced "Echeuzaux", this name retains a tradition today, despite the acute accent added in the 20th century. Before being a vineyard, this place housed buildings belonging to a major agricultural estate, operated by the monks of the Abbey of Saint-Vivant.

This is the smallest Grand Cru on the vines of Morey Saint Denis, it is located north of the village. 

It is said that it was the monks of the very old Collegiate Saint-Denis de Vergy who planted this vineyard at the beginning of the XNUMXth century.

The René Bouvier estate is a family house created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm covers 13 hectares in  pinot noir and 4 in chardonnay for a total of 18 appellations in  BurgundyCôtes-de-Nuits-VillagesFixinMarsannay  et  Gevrey-Chambertin , including Premiers and Grands Crus.

The vineyard is conducted in sustainable agriculture and is converted to organic farming, with tillage, disbudding, harvesting in green, harvest and manual sorting. In 2006, the estate has inaugurated a new winery of 1 200 m², the care given to winemaking and breeding making it a safe bet in the Burgundy.

When you ask Bernard Bouvier what a good wine is, he replies that "it is a wine that makes your mouth water, that makes you want to finish the bottle you have uncorked". Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines. At the southern end of the Beaune appellation area, next to Pommard. A mid-slope plot, gently sloping, facing east / southeast. 14 hectares, the largest plot of this vintage, divided equally between red and white.
The name comes from the fact that this sunny enclosure was home to beehives, and bees were formerly called "honey flies". This is one of the first acquired by Maurice Drouhin (the son of the founder) during the 1920 years. With great determination, he managed to buy 41 different parcels at 8 different owners. The Clos des Mouches is planted in red and white, in equal parts, it gives one of the mythical wines of the House.
A clay and limestone ground. In the upper part: stony ground. In the heart of the closed: rock marno-limestone. This light soil allows an evolution of the wines towards a great finesse.

Cultivation method: vines grown biodynamically certified DEMETER by ECOCERT.

Gevrey-Chambertin is the largest red wine village in the Côte d'Or with its 550 ha of vines in total.
The word Gevrey comes from “Gibriacus” which means goat guardian because of its dry and arid lands where classic crops could not grow.
Only goat breeding allowed the inhabitants to live. These lands were the favorite place for vines in the first century AD.
The word Chambertin, the most famous soil of the village, was attached to Gevrey in 1847. Gevrey-Chambertin was the first village that used this feature.

The parcels grouped in the Vieilles Vignes cuvée of Gevrey-Chambertin come from three different situations:

– The vines furthest north of the village at places called “En Combe” and “Clos de Combe” are quite deep and clayey plots, on a regular slope, which produce sappy, dense and robust wines.

– The plots further east and closer to the estate, at places called Les Crais, Justice, Grandes Raies, are made up of colluvium from the Combe de Lavaux which overlooks Gevrey-Chambertin. These soils, very gently sloping, gravelly and very filtering, produce wines of finesse and elegance.

– The vines located to the south of Gevrey-Chambertin (at places called “Clos de l'Arche”, “Fourneaux”, “Croix des Champs”) are on fairly loamy soil and on limestone bedrock. They produce wines with great complexity and great aromatic power.

The blending and bottling of the wines come from these different terroirs, with vines whose average age is around 50 years, resulting in a single vintage of Gevrey-Chambertin at the Domaine.

Each plot brings its qualities to the entire vintage.
