GIVRY 1ER CRU CLOS FROM THE CELLIER TO THE MONKS 2019

The Cellier aux Moines is made up of a set of historic buildings dating from 1130, a vast Cistercian cellar, a house and its outbuildings, which dominate Givry and have stood the test of time. It was the vineyard of the Monks of the Abbey of La Ferté for seven centuries, until the French Revolution. Then it was the property of the same family for two centuries, before being acquired and restored in 2004 by Philippe and Catherine PASCAL and their three children, Camille, Marguerite and Alexis.
The Domaine du Cellier aux Moines is one of the oldest wine estates in Burgundy. Established around 1130 in Givry by Cistercian monks, it is made up of a Cellar, always surrounded by its Clos de vignes for nine centuries.
The Clos du Cellier aux Moines is a Premier Cru Classé of Givry, today covering 13 hectares, as in the time of the Monks. The Domaine du Cellier aux Moines has 5 hectares, perfectly exposed in the middle and top of the hill, surrounding the historic Cellar. Enclosed above the Clos du Cellier, is another tiny 27-acre enclosure surrounded by very thick walls, forgotten since the phylloxera crisis. It was replanted in 2010 and named Clos Pascal.

In 2015, Guillaume Marko joined the field as technical manager, vines and wines. Holder of a DNO (national oenology diploma) from the University of Dijon, Guillaume did his apprenticeship in major areas of the Côte de Nuits.

The DOMAINE GUYON scea is located in the town of Vosne Romanée.

The estate has been geared towards organic viticulture since the 2000s. To provide transparency in viticulture and winemaking techniques, the estate entered into an Ecocert accreditation process in 2009 and obtained accreditation in 2012 .

The family estate was born before the war, his grandfather and his father successively and wisely led it until his brother and himself took charge of it in the 1990s. The man knows each of his vines, often very old, on the end of his secateurs. Jean pierre guyon took over the operation on his own.

His ambition is to return to what he considers the old way of doing things: that is to say winemaking with most of the whole bunches; no addition of sulfur, if possible, until the spring following harvest.

The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

One of the main vines of the Domaine du Couvent in Chambolle Musigny is located in the Clos de l'Orme climate for 36 ares, which allows vinification by plot of 7 to 8 rooms. Bordering the 1er cru Les Charmes, the vine is established on a gently sloping soil, very draining because composed of a thick layer of limestone scree from the valley of Chambolle. The plot bears very scattered plant material since there are 6 different plantations, the oldest of which were carried out in the 40s, then in 1967,1970, 1972 and 1997. The last plantation dates from XNUMX after the acquisition of the vines by the family. This diversity is one of the keys to the complexity of Clos de l'Orme wine.

A third of the vines are over 50 years old, the rest were replanted in the 70s.

With 80 hectares, Domaine Joseph Drouhin is one of the largest in the region. It is said that it was the monks of the very old Collegiate Saint-Denis de Vergy who planted this vineyard at the beginning of the XNUMXth century.

Vineyard dating from the 12th century, property at the time of the monks of Cluny, this closed of more than 1 hectare, is a monopoly of the Domaine du Couvent. It benefits from a southern exposure at the exit of the Chaudron combe and culminates at 350 meters above sea level on the edge of the woods. The vine originally planted with 50% Chardonnay and 50% Pinot Noir was replanted in the 60s. "La Romanée" is located on a white marl soil, with a profusion of very dominant pebbles which store heat during the day and the restore the night. Domaine René Bouvier is a family home created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm counts 13 hectares in pinot noirand 4 in chardonnay for a total of 18 appellations in Burgundy, Côtes-de-Nuits-Villages, Fixin, Marsannay et Gevrey-Chambertin, including Premiers and Grands Crus.

The vineyard is conducted in sustainable agriculture and is converted to organic farming, with tillage, disbudding, harvesting in green, harvest and manual sorting. In 2006, the estate has inaugurated a new winery of 1 200 m², the care given to winemaking and breeding making it a safe bet in the Burgundy.

When you ask Bernard Bouvier what a good wine is, he replies that "it is a wine that makes your mouth water, that makes you want to finish the bottle you have uncorked". Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines.
