Presentation: 
The Domaine du Château de Chamirey, planted in the best terroirs of Mercurey, comprises 37 hectares - 27 hectares of reds and 10 hectares of whites - including 15 hectares of Premiers Crus.

Vinification and Aging: 
The grapes are harvested by hand and then pressed in a pneumatic press. Alcoholic fermentation and aging takes place at 15% in oak barrels, 15% of which are new for 9 months. The malolactic fermentation is carried out at 100%. The wine is bottled in Traditional Burgundy.

Tasting Notes: Beautiful pale yellow color, limpid and brilliant.
The nose develops notes of pastry, fresh butter, fruit pastes (peach, quince). It is mineral.
The mouth is tense, supple and fresh.

The vinification and aging of the wines are adapted to each vintage and we pay the same attention from Grands Crus to Burgundy. The grapes are pressed whole in a pneumatic press for more than 2 hours. The musts are then cooled for 24 hours before settling. These two operations are essential and decisive.

The musts will be put in oak barrels where the alcoholic fermentation will take place which is monitored daily by taking densities and temperatures. Depending on the vintage, it can last from 2 weeks to a few months.

We can consider that the breeding itself begins after this fermentation.
Details Domain

Etienne SAUZET was born in 1903. It is after a legacy of a few acres of vineyards that he created his own farm. Over the years, he acquires vineyards until the estate covers just over 12 hectares to 1950.
Since his death, in 1975, it is his little girl Jeanine, and her husband Gérard Boudot, who assume the direction of the estate. In 1991, following an estate distribution, the estate has been reduced to just under 9 hectares.
To offset this reduction, purchases of grapes are made from some good winemakers of the appellation.

The house Etienne SAUZET relies, above all, on his domain as owner-harvester, the buying part of grapes being only a supplement.

Since the vintage 2000, Emilie, the daughter of Gerard and Jeanine works with them. Her husband, Benoît RIFFAULT, joined them in 2002.

The range of wines ranges from white Burgundy to Montrachet, Bâtard Montrachet, Biennets Bâtard Montrachet and no less than 6 Premiers Crus among the most prestigious. The fine and precise Puligny Montrachet Village is every year among the references of the appellation.

The different geological formations personalize each terroir, and the resulting wines.

The village of Cruzille produces wines of great minerality which always require a lot of time to express themselves, this is explained by the nature of the soils. The wines of Grévilly and Chardonnay are produced on deeper soils. They are often more charming and more fruity in their youth. Christophe BUISSON was to be a mason like his father and his brother, he decided to leave the family business and enter the world of wine by starting as a broker, while training at the cfppa in Beaune. After obtaining his diplomas, he launched himself in 1996 by renting a few plots of vines.

it gradually takes over plots in different appellations around Saint-Romain.

After the development of his winery in Beaune in 1999, modernized in 2005 he invests in the equipment, so as to work the soil of his vines and thus be able to remove weed killers.

In 2007 he creates a small trading structure, based on the purchase of grapes, which allows him to expand his range of appellations.
