Frédéric LEPRINCE settled for ten years in Nantoux, a small wine-growing village in the Hautes-Côtes de Beaune, where he had the chance to buy an old farmhouse, a heritage witness to a time not so distant 'we lived in near autarky in the heights. The Chablis vineyard is one of the oldest in France. Over time and all over the world, its white wines, made from the Chardonnay grape variety, have acquired an extraordinary reputation. Distributed on both sides of the “Le Serein” river, the appellation's vines extend over 17 communes. The unique character of the wines is given by the soil, essentially of the “Kimmeridgian” type where sediments composed in particular of large quantities of small fossil ostrea virgula oysters were deposited.
