The management of the estate and the vinifications were then passed on to the second generation made up of Samuel, Gaël, Amélien, Roman and Basile. The wines are both fresh and elegant, all the grape varieties are vinified with an expression of terroir and purity of juices.
To the south of the appellation, large limestone formations were deposited by the sea in the Secondary and Tertiary Eras. The land forms narrow plateaus elongated in a NE/SW orientation. This succession of rocky banks gives the landscape its pink or red colors of bauxite, sandstone or clay.

The Domaine des Grecaux is located in Saint-Jean-de-Fos, near the Hérault gorges, in Languedoc.
After a long stay abroad, Sophie and Arnaud Sandras have chosen, since 2010, to settle down on the pretty terroirs of this estate created in 1999.
The Domaine's 7 hectares of vines are located in the communes of Montpeyroux, Aniane and Lagamas. All plots are cultivated as naturally as possible, using organic farming methods (under Ecocert certification).
Syrah grape varieties 75%. Grenache 25% Both grape varieties come from high altitude vines (300m) located on the Causse overlooking Montpeyroux.

The mid-altitude vineyard is located in the northeast of the Pyrénées-Orientales department, on the left bank of the Agly valley near the small village of Baixas.
Soil: limestone - schists. Carignan: 10% Grenache Noir and Mourvèdre: 20% Syrah: 70%. The harvest is destemmed and crushed. Traditional 8-day maceration with daily pumping over for Grenache noir and Syrah.
The Carignan was vinified in carbonic maceration.

Located on the first slopes of the Pyrenean foothills, theSaint Mont appellation extends on 46 common to the west of the department of Gers where it profits from a specific micro-climate, stamped with freshness, and a soil of an extreme richness. The appellation uses local and ancestral grape varieties:Tannat, Pinenc, Cabernet Franc et Cabernet Sauvignon for reds and rosés, Gros Manseng, Arrufiac, and Small Courbu for white wines. The Saint Mont reds, ample and elegant, with notes of black fruits are endowed with a beautiful freshness. Whitesoriginal, fresh and balanced, express aromas of citrus fruit and yellow fruit and a nice minerality. Roseslively, tender and gourmet, exude fragrances of fresh red fruits.

The Clos des Fées estate is located in the commune of Rivesaltes.
The Domaine du Clos des Fées, which today has nearly 30 hectares in the Côtes du Roussillon, Côtes du Roussillon Villages and Vin de Pays des Côtes Catalanes appellations. It is partly composed of steep terraces.
It is in this exceptional terroir perched 350 meters above sea level at the foot of the Pyrenees, an incredible crossroads between the local tramontane and the Mediterranean influence.
A plot of 2 hectares of clay-limestone with the addition of shales with a concentration of iron.
Grapes: Black Grenache
The name of the wine comes from the origins of the VIOT family, coming from Italy under François 1er, to settle in Tours and to work there the Silk for the Châteaux of the Loire. Silk produced in Asia or in the Cevennes was dyed and woven in Touraine. Silk is a texture, a sensation, an elegance. The cuvée "La Soie" is a vintage almost exclusively Syrah.Produced in very small quantities. An expressive nose, an opulent liquorice mouth. Tannins present, fine and elegant. It will be enjoyed with a leg of pink, a duck with honey and spices or a capon.
