“Le Vau Jaumier” is located on a weak south-facing slope, on a clay-limestone soil. The vines settled there for a long time as evidenced by the numerous remains of amphorae. They emerge as soon as the earth is disturbed, from the rubble of a Gallo-Roman villa which rose within this vineyard.

Harvest and vinification: The harvest are manual then the grapes are sorted grain by grain at optimum maturity. “Le Vau Jaumier” is the last harvested terroir of the whole estate. After crushing and destemming of the harvest, alcoholic fermentation starts naturally and is carried out in thermo-regulated wooden vats. Pigeage by foot twice a day for ten days and the maceration is then prolonged for 2 to 15 days in order to complete the extraction. Entonnage, in barrels after devatting and pressing. Malolactic fermentation therefore takes place in oak barrels (during the spring following the harvest).

CHINON CLOS DU NOYER 2020 DOMAINE GROSBOIS 

Located on the right bank of the Vienne Valley, between Tours and Saumur, Domaine Grosbois, an old fortified farm built in the 20th century, covers 19 hectares of vines. Most of the 60 plots that make up the Domaine are located in the heart of a Grand Clos, destroyed in the XNUMXs. Nicolas and Sylvain initiated the reconstruction of this historic Clos. Conducted with respect for organic and biodynamic agriculture, the heart of the vineyard is located mid-slope, sheltered from flooding, on the gentle slopes of the town of Panzoult. They are mainly composed of friable soils of millarges, yellow quartz sands which retain heat at the end of the vegetative cycle (September) and on which Cabernet Franc reigns supreme.

Nicolas and Sylvain favor low yields, around 40 hectolitres/hectare, and a high planting density (5800 vines/hectare) in order to promote the expression of the terroirs and guarantee a certain regularity in the quality of the wines.

Great-grandmother Thérèse had named this plot the Clos du Noyer, because of the presence of walnut trees and the old enclosure, soon replaced by a green wall, a perennial hedge of pear, walnut and fig trees to revive the biodiversity. This unique terroir of 1,24 hectares is located at the top of the hillside on a level millarge soil. The proximity of the forest gives freshness and avoids any water stress. This is the estate's flagship cuvée, a unique wine, representative of the character of Chinon, and of exemplary regularity.

After more than 10 years spent working exclusively on whites, the temptation to apply the same methods on reds eventually became a reality for Jacky Blot.

The search for Cabernet Franc vines led him to visit Chinon, Saint Nicolas de Bourgueil and Bourgueil. The estate is located in this part of the Touraine where Cabernet Franc finds the ideal climatic conditions.
Still, it was necessary to make coincide geological conditions equally favorable. Unfortunately, for several decades, the extension of these vineyards has continued in the alluvial plains of the Vienne and Loire. It's hard to find a great terroir capable of producing authentic wines that are the opposite of fruity thirst-quenching wines through which the Loire is too often known.

And yet in 2002 ...
Fifteen hectares, twelve of which are in one piece, entirely placed on one of the most beautiful hills of Bourgueil, facing south on slopes unusual in the region. The Domaine de la Butte, bordered by the forest which protects it from frost, dominates the alluvial plains.

Le Fief Noir is a 30ha Estate in the center of Anjou Noir, near Angers, in the commune of Saint-Lambert du Lattay.

Anjou Noir is a unique wine-growing region at the end of the East Armorican massif and in the northwest of Anjou. Noir, or “Black”, because of the stone that made up its basement: Le Schiste. Formed 30 million years ago, the Anjou Noir shale has offered an exceptional diversity of soil relief through its history and its transformation through the ages. This stone is structured in a laminated model, which constitutes an ideal terroir for viticulture. Indeed, the high number of cracks in the rock allows the vine to develop its roots inside. Thanks to this, the roots will be able to explore a wide space and drain a wide variety of minerals. We will find in the wine all the originality brought by the schist.

Anjou Noir is also the meeting of one of the great grape varieties, Chenin, with schist. A unique terroir follows a unique grape variety: the chenin takes all its depth, and expresses its richness and its potential. We find here the Anjou Blanc, definition of freshness and minerality as in the Coteaux du layon.

Le Fief Noir grows its grapes organically. Chenin, Cabernet and Grolleau grow on a rich terroir of great diversity. At Fief Noir, the terroir is the winemaker's priority. Choose the right grape variety according to the composition of the soil, work the soil to promote the development of the roots of the vine over the years, eliminate weeds that compete with the vine or contribute to the warming of the soil at the end of winter .

The wines are then placed in barrels or in demi-muids, the proportion of new barrels of which varies according to the vintages and vintages. The Gauthier family is fortunate to have old caves carved out of the tuff which serves as a cozy nest for the wines as a breeding cellar.
