The original Domaine was created by his great-grandparents, Maria Juby and Louis Juby, both from Angevin, who after inheriting vines on the slopes of Les Bruandières in St Aubin de Luigné at the beginning of the 1920th century, arrived in Ardenay, ("wooded height", in Gaulish) a small hamlet on the slopes on the right bank of the Layon, in Chaudefonds sur Layon, to settle there as winegrowers around XNUMX.

After a stint in Paris and other professional activities, Patrick BEAUDOUIN returned to Anjou in 1990 to re-found an estate based on the small and old family winery, the few rented vines still in production, and beautiful uncultivated hillsides.

Today, Domaine Patrick Baudouin has thirteen and a half hectares of vines in production. Ten hectares of Chenin, three and a half of Cabernet Franc and Sauvignon, in the communes of Chaudefonds sur Layon, Saint Aubin de Luigné and Rochefort sur Loire (Quart de Chaume). Patrick also planted one hectare of Savennières in 2009.

The Estate undertook to convert all its vines to organic farming in 2002. Any new plot rented or purchased is immediately converted, if it is not already organic.
Since 1997 they resumed tillage, then abandoned chemical weedkillers, and from 2001 they no longer used synthetic treatment products. In the cellar, since 1994, no more wine from the Domaine has been chaptalized ("sweetened", as the ancients said), by limiting sulfur to a minimum.

In the vineyard, certified organic farming, constant search for the best human labor / biotope ratio, for a non-destructive, sustainable culture.

Depuis cinq générations, la famille Ogereau se consacre à la viticulture sur les prestigieux terroirs de l'Anjou, mettant en valeur le Chenin. Depuis la fin du XIXe siècle, elle transmet de génération en génération un véritable héritage : l'amour du métier, la rigueur dans chaque geste, une écoute attentive de la vigne, une vision unique du vin et un engagement constant à perfectionner leur savoir-faire. La famille Ogereau s'inscrit ainsi dans une histoire prestigieuse, celle d'un vignoble millénaire, qui est le véritable berceau du Chenin.

Depuis leur village de Saint Lambert, perché au-dessus de cette faille volcanique qui surplombe l'autre côté du Layon, offrant ainsi un paysage tourmenté, l'envie d'explorer ces coteaux fut irrésistible pour eux. Ils ont donc entrepris de parcourir ces pentes arides et caillouteuses, à la recherche de nouvelles perspectives. Ils ont découvert une friche et huit rangs de vieilles vignes, qu'ils ont acquis auprès d'un couple de vignerons à la retraite. Conscients de la valeur de ces vieux plants de Chenin, ils ont conservé ces huit rangs et ont progressivement défriché et replanté avec des sélections provenant de leurs vignes anciennes.

Ces coteaux, à la fois rocailleux et balayés par les vents, portent un nom qui leur correspond parfaitement : Pierre Bise. La "Pierre" fait référence à la roche volcanique appelée Spilite, tandis que la "Bise" évoque ce vent frais qui souffle presque sans interruption sur ces versants surplombant la vallée du Layon. Ainsi, "Vent de Spilite" reflète pleinement les grandes caractéristiques de ce terroir exceptionnel.

La Spilite est un type de basalte formé à partir du magma émanant d'une faille volcanique. Cette roche donne naissance à des sols peu profonds, extrêmement caillouteux, contenant une faible quantité d'argile et surtout riches en fer et en magnésium. En outre, le vent constant, cette bise qui souffle presque en permanence sur les hauteurs des coteaux, contribue à façonner ce terroir unique.

A large part of the vineyard is harvested manually, in order to vinify each plot separately. It is in a perfectly equipped cellar (sorting table, carpet, temperature-controlled vats, wooden vats, pneumatic presses, etc.) that he vinifies his grapes in a minimally interventionist manner. The reds ferment for a long time, are lightly punched down and devatted manually. The whites undergo long pressures, and ferment at a controlled temperature.
