Winegrower in Volnay

Nicolas Rossignol was born in 1974 and represents the 5 generation of vine growers on the terroirs of Volnay. After a technical training acquired at the Viticultural High School of Beaune between 1989 and 1994, he put into practice his knowledge acquired during various internships like the Domaine JOSEPH VOILLOT in Volnay or the Domaine du VIEUX TELEGRAPHE in Chateauneuf du Pape, and began vinification on the family estate ROSSIGNOL JEANNIARD.

Anxious to master other techniques of cultivation and breeding, he went to win in South Africa Domaine BOSCHENDAL in 1995 and Bordeaux in Château LA CARDONNE governed by Château LAFITE ROTHSCHILD. It was not long before he created his own estate in 1997 with a surface of 3 Hectares distributed in the communes of VOLNAY, POMMARD, BEAUNE, ALOXE CORTON and PERNAND VERGELESSES, while continuing the vinification and marketing of the wines of Domaine Familial ROSSIGNOL JEANNIARD

In 1998, it is 1Ha 50 extra with applellations like Pommard 1er vintage Jarolières and Chanlins Volnay 1er vintage Fremiets and Santenots that come to enlarge the field. From 2005 a new town is entering the range Savigny-les-Beaune with a village and two 1er raw whose Savigny 1er Cru Lavières et Fourneaux and a Beaune 1er Cru Clos du Roy.
It was also at this time that the decision was made to create a business to unify the two domains at the commercial level, this is how all the wines are now marketed under the label NICOLAS ROSSIGNOL

The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

Set of plots located on the climat les Barreaux for a total area of ​​71 ares. This climat from the top of the village overlooks the Richebourg and is framed by the first growths of Cros Parantoux, Petits Monts and Brulées. This current vineyard is the result of 15 planting campaigns from 1929 to 1977; and therefore presents a very diversified plant material with an average age of over 50 years. The planting density is 12000 vines per hectare, allowing an average yield of 40 hl/ha.

The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

Vineyard dating from the 12th century, property at the time of the monks of Cluny, this closed of more than 1 hectare, is a monopoly of the Domaine du Couvent. It benefits from a southern exposure at the exit of the Chaudron valley and culminates at an altitude of 350 meters on the edge of the woods. The vine originally planted with 50% Chardonnay and 50% Pinot Noir was replanted in the 60s. "La Romanée" is located on a white marl soil, with a profusion of very dominant pebbles which store heat during the day and the return at night. The thin scree soil leading to the limestone subsoil leads to a very high contribution of the various trace elements present in the rocks, giving this rare wine elegance, exquisite finesse and a minerality incomparable to the other terroirs of Gevrey Chambertin.

Delphine is Burgundian and comes from a family of winegrowers. His professional life has always been linked to the great Houses of Burgundy.
Grégory is also from Burgundy. A graduate in oenology, he learned the trade alongside Nadine Gublin, winemaker at the Jacques Prieur estate, and Jean-Pierre de Smet at the Arlot estate. In 2001, he moved to Bordeaux to vinify at Château Smith-Haut-Lafitte, a Grand Cru Classé from Graves. Then it is the meeting with the consultant Stéphane Derenoncourt that he assists until 2004. Then, he becomes technical director of Michel Chapoutier and general manager of Ferraton Père & Fils. Since 2011, he has been technical director of Domaine Laroche in Chablis and has been following Quinta Do Monte d'Oiro in Portugal as a consultant since 2006.

The appellation covers 300 hectares of which around 180 are planted with vines, located a few kilometers from Chablis

Gevrey-Chambertin is the largest red wine village in the Côte d'Or with its 550 ha of vines in total.
The word Gevrey comes from “Gibriacus” which means goat guardian because of its dry and arid lands where classic crops could not grow.
Only goat breeding allowed the inhabitants to live. These lands were the favorite place for vines in the first century AD.
The word Chambertin, the most famous soil of the village, was attached to Gevrey in 1847. Gevrey-Chambertin was the first village that used this feature.

The parcels grouped in the Vieilles Vignes cuvée of Gevrey-Chambertin come from three different situations:

– The vines furthest north of the village at places called “En Combe” and “Clos de Combe” are quite deep and clayey plots, on a regular slope, which produce sappy, dense and robust wines.

– The plots further east and closer to the estate, at places called Les Crais, Justice, Grandes Raies, are made up of colluvium from the Combe de Lavaux which overlooks Gevrey-Chambertin. These soils, very gently sloping, gravelly and very filtering, produce wines of finesse and elegance.

– The vines located to the south of Gevrey-Chambertin (at places called “Clos de l'Arche”, “Fourneaux”, “Croix des Champs”) are on fairly loamy soil and on limestone bedrock. They produce wines with great complexity and great aromatic power.

The blending and bottling of the wines come from these different terroirs, with vines whose average age is around 50 years, resulting in a single vintage of Gevrey-Chambertin at the Domaine.

Each plot brings its qualities to the entire vintage.

A third of the vines are over 50 years old, the rest were replanted in the 70s.

In 1155, the monks of Bèze had built at this place a chapel called Clos de Bèze because it was facing him and was therefore on the east side of the path that goes from Gevrey to Morey. A portico spanned even the path from east to west. 
This chapel was dedicated to Our Lady.

Fallen into disuse in XVth century, it is rebuilt in 1547 by the vine growers. It is Philibert de Beaujeu, bishop of Bethlehem, who dedicates again the 4 July. She was shaved after the Revolution of 1789.

The locality was initially named Sous la Chapelle (the first mention date of 1457), with a High and a Low part.

The Chapel is on a slightly declining area. It is one of the most solar and early sectors of finage Grands Crus.

The situation of the plot is just below Chambertin.

The exhibition is perfect in the Levant.

Its soil is brown, stony and very shallow. At about 30 cm, there is a band of limestone rocks (called lava) which sometimes outcrop. The lavas are flat, gray limestone slabs; they were once used to cover the roofs of houses and churches. Similar roofs can still be found in Burgundy today.

A low slope ensures excellent natural drainage thanks to permeable white limestone scree that line this remarkable plot.

The low thickness of the soil and its rather warm nature lead to La Chapelle-Chambertin a portly and sensual wine, with finesse and elegance, always with great aromatic richness and exceptional density.

The average age of the vines is 60 years (the first plantations date from 1930) and planted only in fine Pinot Noir from mass selection with a planting density of 12 500 plants / ha.

The Chapelle-Chambertin appellation brings together two localities under its name, “Chapelle” proper and “Les Gémeaux”.

Less solar than upper chapel (in a slightly deeper soil), Gemini gives fleshier wines, very dense, tannins a little more formed.

Only this Domain owns these two parcels and is able today to diffuse an assembly of Gemini and Chapel.

Domaine René Bouvier is a family home created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm counts 13 hectares in pinot noirand 4 in chardonnay for a total of 18 appellations in Burgundy, Côtes-de-Nuits-Villages, Fixin, Marsannay et Gevrey-Chambertin, including Premiers and Grands Crus.

The vineyard is conducted in sustainable agriculture and is converted to organic farming, with tillage, disbudding, harvesting in green, harvest and manual sorting. In 2006, the estate has inaugurated a new winery of 1 200 m², the care given to winemaking and breeding making it a safe bet in the Burgundy.

When you ask Bernard Bouvier what a good wine is, he replies that "it is a wine that makes your mouth water, that makes you want to finish the bottle you have uncorked". Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines. Varietal: Gamay Noir

Originally from Champagne, Alexis de Benoist settled in 2010 as an artisan winemaker in the family property to reinstate the culture of the vine, interrupted for a century, and reconnect with its history. Since then, the family has regained its title of winemaker.

Today, he cultivates 9,5 hectares of vines spread over two wine regions: the Mâconnais and the Beaujolais.

The intention is to harmonize the grape variety and its terroir to obtain wines with character. Anxious to preserve the environment and the quality of his wines, Alexis de Benoist has chosen to focus his efforts on the vine, favoring traditional agriculture and farming methods linked to observation.

In this 30 to 80 year old vineyard, the harvest is done by hand. The grapes are thus harvested healthy, at maturity and remain intact on arrival at the vat room for vinification in whole bunches.

The choice of traditional vinification and aging aims to preserve the freshness of the fruit, while retaining structure, in order to produce an expressive, balanced and delicate wine for laying down.
