The Domaine du Cellier aux Moines is one of the oldest wine estates in Burgundy. Established around 1130 in Givry by Cistercian monks, it is made up of a Cellar, always surrounded by its Clos de vignes for nine centuries.
The Domaine du Cellier aux Moines includes, first of all, 5 hectares of the famous Clos du Cellier aux Moines, one of the first historic vintages of Givry, planted in Pinot Noir, and the little Clos Pascal which overlooks it. The Pascal family has also taken over a few plots of chardonnay in order to be able to make some great white wines, mainly Premiers Crus in the villages of Puligny-Montrachet, Chassagne-Montrachet, Santenay, Montagny and Mercurey. More recently, Pinot Noir vines have been planted in Givry villages on the hillside of Gaurons.
The estate now covers almost ten hectares.
the Estate has acquired a vineyard of 23 ares in the climate the Chaumées, one of the first famous wines of Chassagne Montrachet. Facing east, this climate is protected to the west by the rocky outcrop that extends the famous Chassagne quarry. The soil of this parcel is clay-limestone, brown and very shallow in its upper part. PULIGNY MONTRACHET 1ER CRU THE 2016 CHICKENS DOMAINE DU CELLIER TO THE MONKS
The Cellier aux Moines is made up of a set of historic buildings dating from 1130, a vast Cistercian cellar, a house and its outbuildings, which dominate Givry and have stood the test of time. It was the vineyard of the Monks of the Abbey of La Ferté for seven centuries, until the French Revolution. Then it was the property of the same family for two centuries, before being acquired and restored in 2004 by Philippe and Catherine PASCAL and their three children, Camille, Marguerite and Alexis.

A few dozen meters from the grand cru Montrachet, we are here in the world of the most beautiful terroirs of the Côte de Beaune for Chardonnay. This grape variety is very popular in his garden in Puligny-Montrachet. The nature of the soil and subsoil partly explains this observation. It should also be noted that the small mountains overlooking the vineyard protect winds favoring a balanced and regular ripening. The climatic excesses are thus tempered. The vineyards of the estate, 27 ares, are located in the former Clos des Meix in the heart of the premier cru Les Pucelles. It overlooks the village of Puligny-Montrachet, forming as a belvedere on the most beautiful terroirs of the "Côte des blancs", the slope is very soft. His orientation is very classic: full east. The earth is deep, one meter more, but it is very easy to work. The vines were planted in 1970.
When harvesting the grapes are first sorted in the vineyard, then if necessary a second sorting is done in cuverie table. With a gentle pressing, the wort is deboned for 12 h. A natural and light settling that allows the wine to keep a good substrate, protector of oxidation, pledge of a good tasting wealth as well. It is then put in barrels by gravity where it can ferment. The Puligny-Montrachet premier cru Les Pucelles is vinified in barrels, of which 60% new during 20 months. A third of these barrels are of greater capacity (400 liters) than the traditional Burgundy piece of 228 liters. The woody is better integrated, giving a more subtle texture to this wine. A minimum of interventions are carried out during the breeding, some bâtonnages only. Before bottling, the wine spends nearly three months in vats to homogenize its constituents. The vat works by natural gravity on four levels, from the arrival of the grapes to the bottling, without pumping.
