Field of ESPIERS

It is in 1989 that the area of ​​Espiers was born in Vacqueyras, when Philippe Cartoux decided to walk in the footsteps of his grandparents who owned a vineyard in the family since 1879.

The vineyard now covers 9,5 hectares including 3 to Gigondas, 4 en Cotes du Rhone et 2,5 en Côtes-du-Rhône-Villages Sablet. The grape variety is largely dominated by the main 3 Rhone grape varieties, namely Grenache, Syrah and Mourvèdre. The vines are in struggle and receive no chemical treatment. In general, the gestures are all part of a logic of respect for the soil and the environment, with yields particularly lower than 35 hl / ha.

Harvesting is manual for traditional winemaking and aging in oak barrels. Philippe Cartoux likes to produce robust, gourmet but also refined wines. Proof of the quality of its work, Lavinia boutiques offer its wines.

This wine consists of a single plot of vines in the commune of Gigondas.
The vine is aged 40 and composed of 70% Grenache and 30% Syrah. The harvest is manual and often the grapes picked are slightly overripe in order to obtain wines more full-bodied.
The vinification is done with a very high temperature (+ 34 ° c) in order to extract a maximum of aromas and color. The harvest is complete to allow a good homogeneity of the grape marc and long pumping over.
This wine is then aged in barrels for about 12 months, then bottled without sticking or filtration.

With 80 hectares, Domaine Joseph Drouhin is one of the largest in the region. It is distributed throughout Burgundy: Chablis (38 hectares), Côte de Nuits and Côte de Beaune, (38.5 hectares), Côte Chalonnaise (3.5 hectares), and comprises a majority of Grands Crus and Premiers Crus, planted of the two Burgundy grape varieties: Pinot Noir and Chardonnay.

This is the smallest Grand Cru on the vines of Morey Saint Denis, it is located north of the village. 

It is said that it was the monks of the very old Collegiate Saint-Denis de Vergy who planted this vineyard at the beginning of the XNUMXth century.

In the heart of the Northern Rhône Valley, the appellation extends over more than 1600 hectares. The Crozes-Hermitage are available in reds, made from Syrah, and whites from Roussanne and Marsanne.
The soils are quite diverse. Our vineyard is spread over 3 terroirs: the stony terraces of Les Chassis and Larnage to the north, with the white soils of the Château (kaolin) and the high terraces of the Rhône with pebbles (loess).

Robert SEROL had taken over the family farming of 1964 polyculture, with 2 ha of vines at a time when the vineyard was in distress. Persevering and passionate, he still chose viticulture. Accompanied by his wife Marie-Thérèse, they grew the estate and obtained the AOC Côte de Roannaise classification. 

Stéphane SEROL took over the torch in 2000. Respectful of its soil and wine lover, he enlarges the estate, broadens the range of reds, plant Viognier and offers new rosés. After modernizing the farm, with Carine, his companion, they focus on the environment and the selection of terroirs.


Today the 27 hectares of vines in organic farming conversion, produce a range of reds and rosés which all reveal a different personality of the Gamay and give wines fresh and easy to drink. Since 2010, a white from Viognier comes in addition. 

4 8 people work daily in the vineyards and Lucie welcomes you to the cellar on weekdays.

Vineyard

First plot planted by Stéphane Sérol 18 years ago on the hillside of Oudan.
2 ha vines planted in high density (8 500 feet / ha) on granitic soil facing south where the grapes mature earlier.
The soils are mechanically worked and the vines are nourished by the return of vines and by the addition of organic matter and lime.
Many works require the hand of the man: size, disbudding, lifting, stripping ...

Manual harvesting and sorting at the winery on a vibrating table.
Vinification in frustoconical wooden vats with temperature control.
Stain of 40%.
14 days of slow fermentation-maceration thanks to native yeasts, exclusively.

The Cuvée La Germine is the main cuvée of the domain. It is a typical example of Côte-Rôtie from the south of the Côte-Rôtie appellation. It is composed of 95% Syrah and 5% Viognier. It comes from several so-called places (Coteau de Tupin, Tupin, le collet, Maison-Rouge, Coteau de Bassenon) all located on a source of Gneiss or Migmatite. This cuvée, both complete and balanced, primarily expresses the elegance of the Côte-Rôtie appellation.

Originally from Champagne, Alexis de Benoist settled in 2010 as an artisan winemaker in the family property to reinstate the culture of the vine, interrupted for a century, and reconnect with its history. Since then, the family has regained its title of winemaker.

Today, he cultivates 9,5 hectares of vines spread over two wine regions: the Mâconnais and the Beaujolais.

The intention is to harmonize the grape variety and its terroir to obtain wines with character. Anxious to preserve the environment and the quality of his wines, Alexis de Benoist has chosen to focus his efforts on the vine, favoring traditional agriculture and farming methods linked to observation.

In this 30 to 80 year old vineyard, the harvest is done by hand. The grapes are thus harvested healthy, at maturity and remain intact on arrival at the vat room for vinification in whole bunches.

The choice of traditional vinification and aging aims to preserve the freshness of the fruit, while retaining structure, in order to produce an expressive, balanced and delicate wine for laying down.

The Savagnin harvest takes place in October, two weeks after the Chardonnay harvest.

The grapes are harvested manually, crushed and pressed. The juice is decanted then left to ferment. At the end of these fermentations, the wine is racked and put into oak barrels for a period of at least six years and three months. These 228 liter barrels are stored in cellars characterized by their dry atmosphere and their temperature differences between winter and summer. During these six years the barrels are not completed. We say that they are not "oiled", that is to say that we do not add wine to compensate for evaporation as is done every week in Burgundy.

A veil of specific yeasts then develops on the surface of the wine which will work slowly in the darkness of the cellars and give this wine its own character which will make it one of the premier vintages of France.

The only grape variety used to make Château-Chalon wine, as with all yellow wines, is Savagnin, the old synonyms of which are, among others, naturé or fromentin.

Its origin is poorly known. From a botanical point of view, it is close to Klevener d'Heiligenstein grown in Alsace and belongs to the Traminer group. Also the legends reporting a Hungarian or Spanish origin have never been taken seriously. Some texts suggest that savagnin was already cultivated in the XNUMXth century.

It is characterized by an erect habit, an embossed and downy leaf on its underside, small grains, with thick skin, resistant to rot and allowing late maturation.

Located in the heart of Jurançon in the commune of Monein, between the Pyrenees and the Atlantic, the Cauhapé vineyard extends over 54 hectares generously facing south-east. 

The first vines were planted in 1558. Representing only a few acres at the time, the Cauhapé vineyard now extends over 54 hectares. This unique terroir benefiting from a very particular climatology is ideal for the production of very aromatic white wines.

The soil, made up mostly of clay and silica, allows our native grape varieties to express their full potential. The vines are steep and planted on hillsides, at varying altitudes of up to 400 meters.

The significant thermal amplitude of day and night during the end of summer and autumn helps to preserve this precious acidity which affirms the unique character of our wines.

Varietal: Petit Manseng harvested during the first ten days of November.
Yield: 28 hl / hectare.
Vinification Direct pressing. Fermentation in barrels of 1 and 2 wines
Aged for 10 months in vinification barrels, then 6 months in vats.
Bottling takes place after 2 winters.
