SPRINGFONTEIN PINOTAGE 2012 WESTERN CAPE SOUTH AFRICA
Dr. Johst Weber set foot on the springfontein virgin soils, "Strong Spring", in 1994, just after the fall of apartheid. He dreamed of creating a project that involved family, friends and a product that, in his words, "... is a combination of nature and human craftsmanship". This small estate, in organic conversion is located in the extreme south of the country. Only a few kilometers from the sea, and therefore without a stop swept by the offshore winds, the vines have the distinction of resting on Schist soils. Thus the combination of these two elements (sea + soil) allows to bring freshness and minerality to the wines.
The grapes have been selected and harvested by hand to ensure optimum quality. After destemming, the grapes were macerated cold for 6 days to express the color and aromas before fermentation. The wine was fermented with natural yeast with regular punches to extract more color, flavor and tannins. Natural fermentation is slower and leads to much longer fermentation and gives more time for contact with the skin. This gives this wine a more intense and complex flavor profile. The wine is rich, full-bodied with attractive dark red fruits, a subtle oak spice and sweet vanilla hues.
