Benoît VIOT traveled the world before settling down winemaker just north of Montpellier.
This pharmacy, a pharmacist in the industry, has always been passionate about biology and medicine.
Before going into viticulture, he spent ten years trying to understand the wine, even going so far as to make it in his bathroom in England!
A last visit to Chile has decided to embark on this adventure.
After two years of training, in 2004, he rents 7 hectares of AOC Coteaux du Languedoc Pic Saint Loup and Grés de Montpellier vines in Combaillaux and Saint Gély du Fesc. He buys agricultural and winemaking equipment and creates “the Chemin des Rêves”.
The name of the estate comes from a small path that runs along the vines and which had been nicknamed “Chemin des Rêves” by a resident of the village who came to walk there every day.
In 2008, he buys 7 additional hectares of vines at Saint Gély and a cellar.
In 2009, he builds a sales and tasting cellar.
In 2012, he renovates the winery.
Grapes: Syrah, Grenache, Mourvèdre, Carignan

In the heart of the thousand-year-old Gaillacois vineyard, the Cinq Peyres estate is located on the heights of the Cordais plateau, in Cahuzac-sur-Vère. The name of the estate comes from the richness of the terroir and the different limestones that compose it.
From vine to wine, the approach is intended to be virtuous for the environment and for the grapes. Vinification is done without sulfur and takes place spontaneously thanks to the yeasts naturally present on the grapes. Hygiene and tasting are at the heart of the work in the cellar. They attach great importance to the rhythm of nature, to the good health and balance of the soil and to the development of biodiversity.
Grapes Braucol (50%) and Duras (50%)
Vinif Maceration for 1 month in mille-feuilles with pumping over and punching down if necessary. Fermentation in native yeast.
Breeding 2 years in oak barrels over 5 years old, topped up every month. Unfined, unfiltered and sulphur-free.
Irouleguy Domaine Etxondoa Olivier Pouchoulou 2020 75cl
Grape varieties: 100% Tanat
After studying oenology in Bordeaux and Burgundy, then gaining experience working in Côte-Rôtie, in the Rhône, Olivier Pouchoulou decided to return in 2019 to his native land, the Basque Country. Based in Ispoure, he devotes himself to the breeding of his tannats and his cabernet francs, the first vintage of which was produced in 2020. He initially planted 2,5 hectares of vines, then extended his operation by taking into account renting 2 additional hectares on AOC Irouléguy land.
Vinification is carried out with 2/3 whole harvests, followed by gentle vatting lasting 42 days. Subsequently, the wines are aged for 12 months exclusively in old barrels, from Burgundy, thus giving the wines a subtle complexity and remarkable elegance.
Reinhard Brundig, tireless ambassador of the 7th art, is a mad wine lover. He bought Courbissac in 2002, he dreams of making wine, he is under the spell of this isolated place lost in the scrubland and the pines. He is renovating the cellar , buys the first tuns and begins to vinify the different parcels of Courbissac.
The construction is slow, you have to review the copy several times, Courbissac cannot be tamed so easily.
In 2013, he sought to renew his style, he wanted fresher, more elegant wines, and it was in November 2013 that he met Brunnhilde Claux.
At the age of 30, Brunnhilde takes over the technical part of the estate, sets up a gentle vinification, in whole bunches.
The aging is more restrained, the wines are more supple, a new page is being written for Courbissac.
And Courbissac surrenders. The wines relax, the freshness wins, a turning point begins in Courbissac.
The domain is exploited on 15 hectares of vines.
Roc du pière comes from a region called piègne or pière in the local patois.
This terroir is made up of 2 plots on either side of the estate.

The stone, the rockery characterizes this cru, and naturally reveals a dense, powerful wine with spicy characteristics.
The stone is a terroir of great strength, depth and unlimited density. It reveals the power and balance of Minervois wines.

The Clos des Fées estate is located in the commune of Rivesaltes.
The Domaine du Clos des Fées, which today has nearly 30 hectares in the Côtes du Roussillon, Côtes du Roussillon Villages and Vin de Pays des Côtes Catalanes appellations. It is partly composed of steep terraces.
Grapes: 50% Syrah, 30% Grenache, 20% Carignan.
A wine full of fruit with nice tannins.

They are the first generation and creators of the current Mas de Daumas Gassac estate. Véronique Guibert de la Vaissiere is an ethnologist, specialist in myths and traditions in Celtic Ireland. Originally from Aveyron, Aimé Guibert comes from an old Millavoise family of glove makers and tanners.
The management of the estate and the vinifications were then passed on to the second generation made up of Samuel, Gaël, Amélien, Roman and Basile. Today they guarantee the values of respect for their "mother nature" and the primacy of the expression of the terroir, the foundations of the estate's wines since its creation.

Grape Carignan Plantation 1892
The harvest is done in boxes, by hand on the whole field. Each parcel is vinified and aged separately until final assembly. The grapes are sorted first in the vineyard, then before and after destemming. The berries are pushed by gravity in the cement tanks, stainless steel and frustoconical wood manufactured by Marc Grenier in Courberon.
For vinification with whole grapes, we tread the grapes in the wooden vats.
Whites and rosés are vinified on whole juices.
The alcoholic fermentation is done with indigenous yeasts of the soil.
No sulfur is added before breeding. Some of our wines are sulphite-free (apart from sulphites produced by native yeasts).
The name of the wine comes from the origins of the VIOT family, coming from Italy under François 1er, to settle in Tours and to work there the Silk for the Châteaux of the Loire. Silk produced in Asia or in the Cevennes was dyed and woven in Touraine. Silk is a texture, a sensation, an elegance. The Silk and the Wine have in common their natural production, craft of rare products and pleasure. Silky describes the tannins as an elegant and pleasant wine by its delicacy. The charm, the colors, the sensuality accompany Silk and Wine.
The label represents the Coat of Arms of the Family.
The cuvée "La Soie" is a vintage almost exclusively Syrah.Produced in very small quantities. An expressive nose, an opulent liquorice mouth. Tannins present, fine and elegant. It will be enjoyed with a leg of pink, a duck with honey and spices or a capon.

The Domaine des Grecaux is located in Saint-Jean-de-Fos, near the Hérault gorges, in Languedoc.
After a long stay abroad, Sophie and Arnaud Sandras have chosen, since 2010, to settle down on the pretty terroirs of this estate created in 1999.
The Domaine's 7 hectares of vines are located in the communes of Montpeyroux, Aniane and Lagamas. All plots are cultivated as naturally as possible, using organic farming methods (under Ecocert certification).
Syrah grape varieties 75%. Grenache 25% Both grape varieties come from high altitude vines (300m) located on the Causse overlooking Montpeyroux.
