Resulting from the division of Domaine Trapet in 1990, Domaine Rossignol-Trapet is the heir of two illustrious winegrower families. The Rossignol family, originally from Volnay, and the Trapet family from Chambolle, have a long history as winegrowers. Most of Domaine Rossignol-Trapet is located in Gevrey-Chambertin, in Côte-d'Or. It is the sons, Nicolas and David Rossignol, who manage the estate. 
The Rossignol-Trapet estate has been certified in organic agriculture by Ecocert and in biodynamic agriculture by Demeter since 2008.

The René Bouvier estate is a family house created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm covers 13 hectares in pinot noir and 4 in chardonnay for a total of 18 appellations in Burgundy , Côtes-de-Nuits-Villages , Fixin , Marsannay et Gevrey-Chambertin , including Premiers and Grands Crus.

The vineyard is managed in sustainable agriculture and is the subject of a conversion to organic farming, with tillage, disbudding, green harvesting, harvesting and manual sorting. In 2006, the estate inaugurated a new 1 m² vat room, the care taken in vinification and aging making it a sure value in the Burgundy .

When we ask Bernard Bouvier what a good wine is, he replies that "it's a wine that makes you salivate, that makes you want to finish the bottle you have uncorked." In the heart of the Côte de Nuits, in Nuits-Saint-Georges, the FAIVELEY estate has produced exceptional wines since 1825. From Pierre FAIVELEY, founder of the estate, to Erwan FAIVELEY, in charge of the family business, seven generations successive winemakers, whose history is linked to that of their region and its wines.

Among the personalities who have made the Faiveley estate, Georges FAIVELEY is perhaps the one that attracts the most attention. Under his direction, the estate suffered the full brunt of the 1929 crisis, which affected the entire Burgundy wine sector.

It was in this unfavorable economic context that he created, in 1934 and in association with his friend Camille RODIER, the “Confrérie des Chevaliers du Tastevin”, a resurgence of old wine-making brotherhoods, still alive today.

Today at the top, the Faiveley estate operates on plots in some of the most famous climates of Burgundy such as Gevrey-Chambertin, clos de Vougeot, Pommard, Volnay, Puligny Montrachet, Corton Charlemagne… The greatest appellations of Burgundy are all sublimated by the expert and recognized hands of the Faiveley domain.

Delphine is Burgundian and comes from a family of winegrowers. His professional life has always been linked to the great Houses of Burgundy.
Grégory is also from Burgundy. A graduate in oenology, he learned the trade alongside Nadine Gublin, winemaker at the Jacques Prieur estate, and Jean-Pierre de Smet at the Arlot estate. In 2001, he moved to Bordeaux to vinify at Château Smith-Haut-Lafitte, a Grand Cru Classé from Graves. Then it is the meeting with the consultant Stéphane Derenoncourt that he assists until 2004. Then, he becomes technical director of Michel Chapoutier and general manager of Ferraton Père & Fils. Since 2011, he has been technical director of Domaine Laroche in Chablis and has been following Quinta Do Monte d'Oiro in Portugal as a consultant since 2006.

The appellation covers 300 hectares of which around 180 are planted with vines, located a few kilometers from Chablis

The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.


The Domaine du Couvent vineyard in this appellation is symptomatic of the fragmentation of the village: 12 plots, some of which do not exceed one plot, spread over 9 climats for a total of 1ha 80. Two thirds of the vines are over 40 years old, the average yield is from 38 to 40hl/ha. The main plots of the estate are located in the heart of the village in the middle of the hillside: Les Condemennes for 45 ares, Clos de l'Orme for 36 ares, and Chardannes for 25 ares. The rest of the vineyard is spread over the top of the village on the hillside but in an anticline rich in marl (Behind the Four, Echesaux and Creux Baissants for a total of 33 ares) and the bottom of the Piedmont in a soil rich in clay (Mal Carrées, Mombies and Herbues for 38 ares). We vinify and age several cuvées by grouping the terroirs by sector, the assembly only intervening at the end of the ageing. The usual proportion of new barrels is 15 to 20%. This mosaic of terroirs brings to the final blend a typicity very representative of the appellation: intense red berries, elegance, delicacy but also roundness and smoothness.

At the southern end of the Beaune appellation area, next to Pommard. A mid-slope plot, gently sloping, facing east / southeast. 14 hectares, the largest plot of this vintage, divided equally between red and white.
The name comes from the fact that this sunny enclosure was home to beehives, and bees were formerly called "honey flies". This is one of the first acquired by Maurice Drouhin (the son of the founder) during the 1920 years. With great determination, he managed to buy 41 different parcels at 8 different owners. The Clos des Mouches is planted in red and white, in equal parts, it gives one of the mythical wines of the House.
A clay and limestone ground. In the upper part: stony ground. In the heart of the closed: rock marno-limestone. This light soil allows an evolution of the wines towards a great finesse.
Estate Area: 6,82 ha.
Average age of the vines: 45 years.
