The DOMAINE GUYON scea is located in the town of Vosne Romanée.

The estate has been geared towards organic viticulture since the 2000s. To provide transparency in viticulture and winemaking techniques, the estate entered into an Ecocert accreditation process in 2009 and obtained accreditation in 2012 .

The family estate was born before the war, his grandfather and his father successively and wisely led it until his brother and himself took charge of it in the 1990s. The man knows each of his vines, often very old, on the end of his secateurs. Jean pierre guyon took over the operation on his own.

His ambition is to return to what he considers the old way of doing things: that is to say winemaking with most of the whole bunches; no addition of sulfur, if possible, until the spring following harvest.

The vinification and aging of the wines are adapted to each vintage and we pay the same attention from Grands Crus to Burgundy. The grapes are pressed whole in a pneumatic press for more than 2 hours. The musts are then cooled for 24 hours before settling. These two operations are essential and decisive.

The musts will be put in oak barrels where the alcoholic fermentation will take place which is monitored daily by taking densities and temperatures. Depending on the vintage, it can last from 2 weeks to a few months.

We can consider that the breeding itself begins after this fermentation.

Etienne SAUZET was born in 1903. It is after a legacy of a few acres of vineyards that he created his own farm. Over the years, he acquires vineyards until the estate covers just over 12 hectares to 1950.
Since his death, in 1975, it is his little girl Jeanine, and her husband Gérard Boudot, who assume the direction of the estate. In 1991, following an estate distribution, the estate has been reduced to just under 9 hectares.
To offset this reduction, purchases of grapes are made from some good winemakers of the appellation.

The house Etienne SAUZET relies, above all, on his domain as owner-harvester, the buying part of grapes being only a supplement.

Since the vintage 2000, Emilie, the daughter of Gerard and Jeanine works with them. Her husband, Benoît RIFFAULT, joined them in 2002.

The range of wines ranges from white Burgundy to Montrachet, Bâtard Montrachet, Biennets Bâtard Montrachet and no less than 6 Premiers Crus among the most prestigious. The fine and precise Puligny Montrachet Village is every year among the references of the appellation.

Location: Located on the right bank of the Serein, above the Grands Crus Bougros de Chablis, this plot, replanted in 2007, extends over a gently sloping hillside overlooking the surrounding climates, benefiting from an ideal southwest exposure .

History & traditions: In the 1960s, at a time when the Chablis vineyards were in decline, Robert Drouhin had faith in the potential of this soil which had been ravaged a century earlier by phylloxera. He was among the first Burgundian owners to promote this terroir, producing authentic wines reflecting their geographical origin.

Type of soil: “Kimmeridgian” limestone soil contains billions of marine microfossils in a whitish cement, testifying to its oceanic past several hundred million years old. This marine origin gives Chablis wines a distinct and inimitable flavor.

Location: Les Clos is the largest and arguably most famous climat in Chablis, located between Valmur to the west and Blanchot to the east. Its exposure gives the wine a characteristic generosity and power.

History & traditions: Considered the cradle of Chablis, Les Clos was spotted in the Middle Ages by wine-growing monks. The name “Les Clos” probably evokes the surrounding walls that they had erected to demarcate the plot, which have now disappeared for centuries. It was hit hard by phylloxera at the end of the 1960th century, like the entire region. In the XNUMXs, Robert Drouhin was one of the first owners of Beaune to undertake its rebirth.
